Adventures with Pork and Wire Ribbon
... ha.... ha... but not at the same time. First is the kitchen adventure which looks for all the world like a gloppy mess despite my trying to make it look appealing = obviously food photography is not my "thing."!
What to do with pork tenderloin when you have divine Rosemary bread from Healthy Grains Bakery in the pantry? Solution was really delicious and will do again! Browned the pork tenderloins in a little olive oil and garlic, seasoned them with sea salt. Prepare 1/2 large bag of chopped spinach in microwave and drain. Cook 1-1/2 Cups fusilli whole wheat pasta and drain. Layer cooked spinach on browned pork tenderloins, season to taste with Italian herbs, layer fusilli pasta over spinach and top with 1/2-2/3 jar of traditional pasta sauce (not the thick chunky kind). Cover and bake at 350 for 35-40 minutes. Remove from oven, top with shredded mozzarella and return to oven till cheese melts.. Voila!
